Hisaka Rapid Preparation Sterilizer (RIC Series) is a high-efficiency system designed to cook and sterilize large volumes of semi-solid and solid foods (such as curry, stew, soups, and sauces) BEFORE they are packaged. Unlike Retort sterilizers that process food inside the package, the RIC sterilizes the food in bulk, ensuring consistent quality and significantly reducing processing time.
Sterilizes food in bulk before filling. This eliminates the long heating/cooling cycles required by Retort pouches, allowing for much faster production speeds.
Specialized pumping and heating system capable of processing foods with chunks, high viscosity, and large particles (up to 30mm) without damaging texture or flavor.
Rapid heating and cooling preserves the original taste, texture, and nutrients of the food. Reduces "overcooked" flavor often associated with long Retort cycles.
Direct connection to aseptic filling machines. Sterilized food is transferred hygienically to filling stations for pouches, cups, or trays, maintaining commercial sterility.
Regenerative heat exchange system recovers heat from hot sterilized food to pre-heat incoming raw food. Reduces steam and cooling water consumption by up to 50%.
SUS304 stainless steel construction with full CIP (Clean-in-Place) capability. No dead spots for bacteria to hide, ensuring food safety compliance.
The RIC operates through a continuous cooking and sterilization cycle:
Raw ingredients (meat, vegetables, sauce) are loaded into the feeding hopper and pumped into the system.
Food passes through heat exchangers. It is cooked and pre-heated using recovered heat from previous batches.
Food reaches sterilization temperature (e.g., 130°C-140°C) and holds in a special tube for the required time to kill bacteria.
Sterilized food is rapidly cooled to filling temperature (e.g., 20°C-30°C) using chilled water, preserving texture.
Cooled, sterilized food is transferred directly to an aseptic holding tank or filling machine for packaging.
System automatically cleans itself with hot water and chemicals, ready for the next production run.
Hisaka RIC Series is ideal for mass-producing ready-to-eat meals and sauces:
High-viscosity foods with meat and vegetable chunks. Preserves texture without mushiness.
Cream soups, pasta sauces, gravies, and dressings requiring smooth, consistent sterilization.
Pilaf, risotto, and mixed rice dishes where grain integrity is important.
Simmered fish, braised meats, and ready-to-cook protein meals.
Semi-moist and pouch pet foods requiring high hygiene standards.
Sterilizing food in bulk is much faster than heating it inside thick packaging. Reduces cycle time from hours to minutes.
HTST process minimizes heat damage. Food tastes fresher, retains texture, and looks better than Retort-processed meals.
Heat recovery system reuses energy. Lower steam and water consumption compared to batch cooking + Retort.
Closed system with aseptic transfer ensures no re-contamination after sterilization. Safe for long shelf life.
For R&D and product testing before full-scale production, Hisaka offers the Retort Rapid Preparation Sterilization Tester - a pilot-scale version of the RIC system. This testing machine allows food manufacturers to validate sterilization recipes, test shelf life, and optimize processing conditions before investing in full production equipment.
